Award Winning Sausage Maker!

We've been making sausages a long time! Our recipe passed down from generations of Butchers. Techniques taught by grandfathers. On the 25th October 2010 we were invited to Butchers Hall, Central London, in the Smithfield Market area of London.

We took the early 6:15am plane from Belfast to London Standsted, to get the Stansted Express. Not everything went to plan..... Our ice packs were confiscated, which meant the nice people at starbucks in the departure lounge gave us some ice. Then the first train was cancelled after a run from the plane. We made it in the nick of time, running from Barbican underground station!

We were greeted by the Meat Trades Journal, and we submitted our award winning Traditional Beef Sausages and our Pork Honeybee and Mustard Sausages. The hours taken over these sausages, surely some of the most expensive sausages ever made.

Butcher's Hall is one of the Guild Halls of London, to which only qualified tradesmen belong to. I'm told my Grandfather took my Father here. To see the splendor of history in the cabinets is amazing.

Some of the best palates of the UK were here to rate our sausages! "The Sausage King" (Stephen Plume) from sausagefans.co.uk was amongst the judges. After Judging we tasted last years winning sausage for Lunch and the prize giving took place.

Unfortunately we didn't win Champion of Champions 2010 this year but we look forward to entering again next year.

To be considered amongst the best butchers in the UK is an honour. We pride ourselves in our work, and our staff are the backbone of our success.
